Easy and Delicious Corned Beef and Cabbage Recipe
This classic dish is perfect for St. Patrick’s Day or any time you crave a hearty, flavorful meal. This version keeps things simple while packing in plenty of flavor.
Ingredients:
3–4 lbs corned beef brisket (with spice packet)
10 cups water (or enough to cover the beef)
1 onion, quartered
3 garlic cloves, smashed
2 bay leaves
1 tsp black peppercorns
3 large carrots, cut into 2-inch pieces
3–4 medium Yukon Gold potatoes, quartered
1 small head green cabbage, cut into wedges
2 tbsp unsalted butter (optional, for serving)
Fresh parsley, chopped (for garnish)
Dijon mustard or horseradish (optional, for serving)
Instructions:
Prepare the Corned Beef
Rinse the corned beef under cold water to remove excess brine.
Place it in a large pot and cover with water.
Add the onion, garlic, bay leaves, and peppercorns.
Bring to a boil, then reduce heat to a simmer. Cover and cook for 2.5 to 3 hours, or until the beef is fork-tender.
Cook the Vegetables
Add the carrots and potatoes to the pot during the last 45 minutes of cooking.
Place cabbage wedges on top during the last 20 minutes and simmer until tender but not mushy.
Slice and Serve
Remove the corned beef and let it rest for 10 minutes before slicing against the grain.
Serve with the cooked vegetables and a drizzle of melted butter.
Garnish with fresh parsley and serve with mustard or horseradish on the side.
Pro Tips:
Slow Cooker Option: Cook on low for 8–9 hours, adding vegetables in the last 2 hours.
Instant Pot Option: Cook corned beef for 90 minutes on high pressure, then add veggies and cook for 5 minutes more.
